This is the most common form of Kimchi made with Napa Cabbage, a little bit of Daikon radish, and seasoned with red pepper powder to provide a spicy kick. Most ingredients are locally sourced. Handmade and naturally fermented, it is a truly wholesome food, good for anyone with diet restrictions (gluten free) and it’s vegan.

Gochu Jang Paste

 

Gochu Jang is a fermented hot pepper paste that has a history of over 1,000 years. It’s a savory, spicy, and pungent fermented Korean condiment made from malt, red chili, glutinous rice, fermented soybeans, and salt.

 

We are probably one of the few outlets making this sauce in the traditional way by first steeping malt in water, stirring endlessly, and fermenting at least for six months before packaging. Good Gochu Jang has a silky red body with the perfect balance of saltiness and spiciness with s sweet flavor lingering subtly at the end.
