Spicy Red Napa Cabbage Kimchi

 

This is the most common form of Kimchi made with Napa Cabbage, a little bit of Daikon radish, and seasoned with red pepper powder to provide a spicy kick.  Most ingredients are locally sourced.  Handmade and naturally fermented, it is a truly wholesome food, good for anyone with diet restrictions (gluten free) and it’s vegan.

Flavor and Pairing:

 

What’s refreshing about our kimchi is that it has less seasoning (less salt) and no fish sauce (instead, we use seaweed powder), yet the flavor is bold and complex through natural fermentation. The first thing you taste is the bright tanginess of kimchi lingering in your mouth and the crunchy texture of cabbage dictating your pallet. You will taste salty, sweet, and spicy kicking in at last.

Spicy Radish Kimchi

 

This radish Kimchi is one of the most popular Kimchis in Korea. Known as “Kkakdugiin Korean, it has a unique and crunchy texture and invigorating flavor. Pairs especially well with soups and stews, but a spoonful of it will give a kick to any dish. Enjoy!

Radish, Yellow Onion, Green Onion, Red Pepper Powder, Sugar, Sinan Sea Salt, Garlic, Ginger, Brown Seaweed.

Flavor and Pairing:

 

This is a kimchi with big, bold personality and I often brag about it as a cure for hang over or depression. It has a somewhat intense heat not only because of  the red pepper powder but also because the spicy juice released from the radish during the fermentation. I often get the question “It’s fermented but how can it be still so crunchy at the same time?”

 

Soupy food such as carrot soup, ramen, pho, curry, and stew go very well with this kimchi.

Mild White Napa Cabbage Kimchi

 

Originated from the northern part of Korea. Slightly sweeter with a fruity flavor and a tantalizing zing that lingers on your pallet.  Great for condiment with any meal.  Or try a shot of  juice.  I call it ‘bio veggie soda’!

This Kimchi may look bland, but it’s a big mistake if you think it will taste bland, too. We add apple juice and carrot to it, which creates such a subtle fruity sweetness. Drink the juice that comes with this kimchi and you will understand how the champagne bottle feels when the cork is popped. You brain will clear and your belly will feel as if the juice is literally collecting all the dirt in the gut on the way out. The more you munch on this kimchi, the more it will grow on you, and you will want to eat everything with it. Plus, If you love kimchi but spicy food is not on your diet plan, this is the kimchi to try.

 

Pair it with fish, chicken, a sandwich, tofu, or salad.

‘Plenty Roots’ Kimchi

 

Inspired from cooking for a friend who went through cancer treatment in 2014, I decided to bring anti oxidant ingredients into a jar. Using organic roots grown in California naturally fermented in the style of a traditional Korean Kimchi ‘Dong Chi Mi’, It’s a true harmony of Yin and Yang and I hope this brings balance to your health and mind.

Flavor and Pairing:

 

Tara Duggan from the San Francisco Chronicle described Plenty Roots as “earthy and floral”  with a hint of ginger and orange at the end. This kimchi is not spicy, but is quite tangy and has an amazing crunchy texture.

 

One of the favorite ways I enjoy this kimchi is with a steak and mashed potato. I often serve a bowl of this kimchi on the side of a whole bird or a block of rib eye steak at a special holiday dinner table. It goes well with any meat dish and the striking ruby red color never fails to wow the guests. I also add it to sushi rolls, spring rolls, sandwiches, etc. Adding it to a salad for extra texture and tanginess is also another good way to enjoy.
